Chapter 2: Diet and Nutrition - Introduction to the Second Edition

Nutrition has always been one of the key components of alternative medicine. Chapter 2 summarizes studies which identify foods, such as fats, oils, meats, and processed products, that contribute to the risk of chronic diseases. It also discusses foods and supplements–namely, fresh organically grown fruits and vegetables, whole grains, seeds, nuts, and fish–that have proven effective in clinical trials in preventing and reversing chronic disorders. The revised chapter also includes helpful nutritional tips and guidelines, as well as a Food Diary to help readers monitor their daily nutritional intake.
